Abstract

The interphase adsorption layers (IAL) of gelatin, located on the boundaries of benzene and gelatin solution in D2O, were studied by NMR method. It was shown that the formation of IAL of gelatin (T≥313 K) led to the decrease of proton signals and to the widening of NMR spectral lines. This result is similar to that of collagen like spirals and gels of gelatin and shows that the fraction of mobile gelatin segments in IAL decreases almost to zero point. The presence of two signals in NMR spectrum may be caused by the solubilization of benzene in gelatin.
